Here's a great salad dressing that's easy to make. The hot jalapeno pepper jelly gives it a kick that's sure to satisfy anyone who loves spicy food.
Ingredients
- ¼ cup rice wine vinegar
- ¼ cup hot jalapeño pepper jelly
- 1 Tbsp. chopped fresh mint
- 1 Tbsp. grated onion
- 1 Tbsp. fresh lime juice
- 1 tsp. salt
- ¼ tsp. pepper
- ¼ cup vegetable oil
Instructions
- Whisk together first 7 ingredients.
- Gradually add oil in a slow, steady stream, whisking until smooth.

This recipe was as delicious as it was easy! Any time I can add jalapenos or jalapeño pepper jelly to my menu, I’m happy! I used this on an arugula salad with apples and walnuts. YUM!
